By making small pies you can have all to yourself, you will feel like you are winning. And with 380 calories per pie, they just might disappear before you can add the cool whipped cream topping!

Ingredients

  • 2 shortcrust pastries
  • 200 grams philadelphia cream cheese
  • 150 grams brown sugar
  • 1 cup pumpkin puree (well drained)
  • 2 eggs
  • 1 teaspoon vanilla flavor
  • 1 teaspoon cinnamon

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Use a cup to cut out round slices of crust pastry. Spread pastry in muffin pans.
  3. Set aside.
  4. Mix the cream cheese with the sugar, pumpkin puree, eggs, vanilla, and cinnamon powder. Stir mixture until homogeneous and creamy.
  5. Pour the mixture into each pastry dough, and bake for 15 minutes.

This was so easy to make and tasted like the fanciest pumpkin cheesecake. I adore this flavor combination and was so excited to find a simple recipe to use. An easy way to drain the pumpkin puree is to line a sieve with a few sheets of paper towel and empty the can onto it. Let it sit for an hour or so and the towels will soak up the extra liquid. I enjoyed these plain, but I am definitely making them again and may sprinkle some chocolate on the top.
