Spoil yourself with this healthy take on a scrumptious dessert that takes advantage of what is available in the fall season. Incorporating high fiber ingredients with the basic components of a pumpkin pie and an apple crumble, this dessert will not only taste good, but it will also make you feel good. Although it has a total cook time of 85 minutes, do not be discouraged, as 2/3 of this is solely for baking and cooling so you have plenty of time to do other things before it is ready to serve.

Ingredients

  • 1 cup wheat flour
  • 1/2 cup dark brown sugar
  • 1 pinch salt
  • 2 tablespoons cinnamon
  • 6 tablespoons unsalted butter (cold, and cut into pieces)
  • 2 cups wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon cinnamon
  • 2 tablespoons ginger powder
  • 1/2 teaspoon nutmeg
  • 1/2 cup vegetable oil
  • 1/2 cup apple puree (without sugar)
  • 400 grams pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 cups sugar
  • 1/2 cup dark brown sugar
  • 2 large eggs (at room temperature, lightly beaten)

Directions

  1. In a bowl, mix the flour, brown sugar, salt and cinnamon.
  2. Then add the butter and mix with your fingertips until the mixture is crumbled and brittle.
  3. Refrigerate while making the dough.
  4. Preheat oven to 180 degrees Celsius.
  5. Grease and flour a rectangular bread pan.
  6. In a small bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  7. In another large bowl, mix the oil, apple, vanilla, pumpkin, and both sugars until well combined.
  8. Beat the eggs.
  9. Add the flour mixture to pumpkin mixture, and stir, but not too much, just enough to mix.
  10. Pour the batter into the pan, and spread evenly.
  11. Sprinkle with topping and, bake for 45 to 50 minutes.
  12. Let cool in the pan for at least 20 minutes.

This was a ravishing 4 star crumble to prepare and I will be looking for an opportunity to make it again. It has the taste of pumpkin pie with bitter apple pie and plenty of crumbles to spare.
