Description
Spoil yourself with this healthy take on a scrumptious dessert that takes advantage of what is available in the fall season. Incorporating high fiber ingredients with the basic components of a pumpkin pie and an apple crumble, this dessert will not only taste good, but it will also make you feel good. Although it has a total cook time of 85 minutes, do not be discouraged, as 2/3 of this is solely for baking and cooling so you have plenty of time to do other things before it is ready to serve.
Ingredients
- 1 cup wheat flour
- 1/2 cup dark brown sugar
- 1 pinch salt
- 2 tablespoons cinnamon
- 6 tablespoons unsalted butter (cold, and cut into pieces)
- 2 cups wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 2 tablespoons ground ginger
- 1/2 teaspoon nutmeg
- 1/2 cup vegetable oil
- 1/2 cup apple puree (without sugar)
- 400 grams pumpkin purée
- 1 teaspoon vanilla extract
- 2 cups sugar
- 1/2 cup dark brown sugar
- 2 large eggs (at room temperature, lightly beaten)
Directions
- 1In a bowl, mix the flour, brown sugar, salt and cinnamon.
- 2Then add the butter and mix with your fingertips until the mixture is crumbled and brittle.
- 3Refrigerate while making the dough.
- 4Preheat oven to 180 degrees Celsius.
- 5Grease and flour a rectangular bread pan.
- 6In a small bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
- 7In another large bowl, mix the oil, apple, vanilla, pumpkin, and both sugars until well combined.
- 8Beat the eggs.
- 9Add the flour mixture to pumpkin mixture, and stir, but not too much, just enough to mix.
- 10Pour the batter into the pan, and spread evenly.
- 11Sprinkle with topping and, bake for 45 to 50 minutes.
- 12Let cool in the pan for at least 20 minutes.
