Minced garlic and diced pumpkin add a unique flavor element to this savory stew. Perfect for those who are not into spicy foods, this Pumpkin Stew is light seasoned with salt and pepper in order to put the focus on the rich flavor of the pumpkin.

Ingredients

  • olive oil
  • 1/2 onions (finely chopped)
  • 250 grams ground beef
  • salt
  • ground black pepper
  • 425 grams crushed tomatoes (canned)
  • 200 grams pumpkin (sliced into small cubes)
  • 1 garlic cloves (minced)
  • 215 grams red beans (canned)
  • 215 grams corn kernels (cooked)

Directions

  1. Heat a dash of olive oil in a large cooking pot at low flame.
  2. Add the onion, ground beef, and salt and pepper to taste to the cooking pot. Stir occasionally until the onion looks transparent.
  3. Add the crushed tomatoes, pumpkin, and garlic, and cook for 20 minutes while stirring occasionally.
  4. Add the red beans and corn kernels to the pot, and cook for 5 minutes while stirring occasionally.
  5. Turn off the stove and serve.
