    The flavor was good, but ai didn't like the texture. I like pumpkin pie and I like pumpkin muffins, but not in the same bite. They were much better after they cooled in the fridge.

    LOVE THESE! You won't regret making them. They're super moist and are best eaten if kept in the fridge!

    I had just about 1/3 c. of pumpkin left over from pumpkin pancakes, so this recipe was perfect. I got 12 moist and spicy muffins. We had some tonight with lentil and split pea soup, a complimentary pairing. Thanks for the recipe. Well worth your efforts!
