Description

Embracing the flavors of autumn, this pumpkin hummus combines the classic fall ingredient with the classic mediterranean dip. Roasted pumpkin is chopped and added to a blender with the rest of the usual hummus ingredients to be blended until smooth. Season to your individual taste and serve with a bit of harissa sauce for additional spice. Best served with fresh veggies, a warm pita, or crunchy pita chips. This hummus is vegetarian, vegan, and gluten free.

Ingredients

400 grams pumpkin (peeled and halved)
400 grams chickpeas (canned, drained)
2 cloves garlic (peeled and chopped)
2 tablespoons tahini
1/2 tablespoon harissa sauce
2 tablespoons olive oil (+ a little extra for garnish)
150 milliliters water

Directions

1Pre-heat the oven to 200C.
2Wrap the pumpkin in aluminum foil previously brushed with oil, as ‘en papillote.’
3Place on a baking tray and cook for 45 minutes or until soft and tender. Leave to cool.
4Once cool, chop into pieces and place in a food blender along with the chickpeas, garlic, tahini, harissa, olive oil, and a pinch of salt.
5Blend all the ingredients together, adding water to the desired thickness.
6Season to taste and serve with a drizzle of oil and harissa.
7Serve with pitta bread.
