Pumpkin Hummus with Harissa Sauce

Description

Embracing the flavors of autumn, this pumpkin hummus combines the classic fall ingredient with the classic mediterranean dip. Roasted pumpkin is chopped and added to a blender with the rest of the usual hummus ingredients to be blended until smooth. Season to your individual taste and serve with a bit of harissa sauce for additional spice. Best served with fresh veggies, a warm pita, or crunchy pita chips. This hummus is vegetarian, vegan, and gluten free.

Ingredients

  • 400 grams pumpkin (peeled and halved)
  • 400 grams chickpeas (canned, drained)
  • 2 cloves garlic (peeled and chopped)
  • 2 tablespoons tahini
  • 1/2 tablespoon harissa sauce
  • 2 tablespoons olive oil (+ a little extra for garnish)
  • 150 milliliters water

Directions

  1. Pre-heat the oven to 200C.
  2. Wrap the pumpkin in aluminum foil previously brushed with oil, as ‘en papillote.’
  3. Place on a baking tray and cook for 45 minutes or until soft and tender. Leave to cool.
  4. Once cool, chop into pieces and place in a food blender along with the chickpeas, garlic, tahini, harissa, olive oil, and a pinch of salt.
  5. Blend all the ingredients together, adding water to the desired thickness.
  6. Season to taste and serve with a drizzle of oil and harissa.
  7. Serve with pitta bread.
