I baked this bread today. I substituted by using 1/4 c. Crisco and 1/2 c butter. I also added a cup of pecans. it didn’t rise nearly as much as my banana bread but it was delicious and moist.

Didn’t have baking powder or measuring cups. Added a lunch of baking soda and a spoonful of tart cherry juice to compensate. I also over mixed.... and used pumpkin spice instead of nutmeg... so basically.... when you mix stuff and make it it’s yummy don’t trip it will be more than edible.

I got so many compliments on this bread. I didn’t make any changes, except changing to flour and sugar measurements to weights. This was almost too moist, but still just amazing - just made it a bit stickier in the hand. I had mismatched pans sizes. I thought had I had overcooked the 8x4, but it turned out lest sticky on the outside and was still deliciously moist on the inside. I will make sure to bake all a little longer next time.

Wow, this was super delicious, moist and airy. I used 1.5 cups of sugar instead of 2 because I like it less sweet. If I make it for others, I would definitely do 2 cups as the recipe called for to get the perfect sweetness. I mixed half the batch with chopped walnuts, but turned out I didn't like the walnut taste in pumpkin bread. Will definitely make this again for the holidays to serve guests.
