  • 3/4 cup whole wheat flour
  • 1 1/4 cups sugar
  • 1 1/2 tsp. Spice Islands Pumpkin Pie Spice
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 tsp. Argo Baking Powder
  • 1 cup canned pumpkin
  • 1 apple (cored and shredded, about 1 cup)
  • 1/3 cup Mazola Corn Oil
  • 1 egg
  • 1 tsp. Spice Islands Pure Vanilla Extract
  • 1/2 cup dried cranberries (OR golden raisins OR chopped dried apricots)
  • 2 Tbsp. flax seed
  • 1/4 cup chopped walnuts

    Directions

    1. Preheat oven to 375ºF.
    2. Combine all-purpose flour, whole wheat flour, sugar, pumpkin pie spice, baking soda, salt and baking powder in medium bowl.
    3. Whisk together pumpkin, apple, oil, egg and vanilla in a large bowl.
