Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion (medium, coarsely grated)
  • 2 slices white bread (stale, crusts removed, soaked, excess water squeezed out)
  • 14 ounces ground beef
  • 8 3/4 ounces sausage casings (removed)
  • 1 medium carrot (finely grated)
  • 1 tablespoon tomato paste
  • 2 tablespoons fresh flat leaf parsley (chopped)
  • 2 sheets puff pastry (defrosted, halved horizontally)
  • 1 egg (lightly beaten)

Directions

  1. Preheat oven to 425°F. Line a large baking tray with parchment paper.
  2. Heat oil in a small frying pan and sweat onion until soft and translucent. Let cool slightly then mix with bread, ground beef, sausage, carrot, tomato paste and parsley. Season.
  3. Distribute meat mixture along center of each piece of puff pastry. Roll up, brushing edge with egg to enclose filling. Cut each roll in 1/2 then place each roll, seam-side down, on prepared tray. Brush egg over top and bake for 25 mins, or until browned and cooked through.
  4. Let cool for 5 mins before serving.
