Puff Pastry Filled with Apricot in Syrup

Description

Discs of puff pastry encase a syrupy apricot and cream cheese filling. The pastries then bake until golden and get a sprinkle of powdered sugar once cooled. Frankly, any canned stonefruit will work here, such as peaches, so substitute them if desired. Thawed frozen fruit would work here, too. Whatever you decide, the pastries are equally enjoyable at room temperature or warmed.

Ingredients

  • 1 sheet puff pastry
  • apricots (in syrup)
  • cream cheese
  • milk
  • granulated sugar
  • powdered sugar

Directions

  1. 1Preheat the oven to 190C.
  2. 2Cut out an even number of puff pastry disks.
  3. 3On one of the disks, place 1/2 of an apricot in syrup, spread another disk with cream cheese and seal closed with the other disk. DO this until all the disks have been used.
  4. 4Brush with milk, sprinkle with granulated sugar, and bake for approximately 20 minutes until golden.
  5. 5Let them cool and sprinkle with powdered sugar.
