A quick pastry recipe that will add a fruity flaky crunch to your afternoon coffee or tea. Make your own puff pastry of buy it premade. Use your favorite flavor of jam for the filling or make a homemade jam with berries or fruit from your garden, the choice is yours.

Ingredients

  • puff pastry (rectangular)
  • jelly (Plum, or other preferred flavor, to taste)
  • 1 handful flaked almonds
  • powdered sugar (to taste)

Directions

  1. Start by preheating the oven to 180 degrees Celsius.
  2. Line a baking tray with non-stick baking paper.
  3. Roll out the puff pastry and spread the jelly across the top.
  4. Sprinkle it with almonds.
  5. Roll the dough with the jelly side in and cut it into slices 2 cm. thick using a serrated knife.
  6. Lay the slices sideways on the tray and spread and dripping jelly over the top so that it does not stay on the tray. They should look a bit like roses.
  7. Bake until they are golden brown.
  8. Remove them and let them cool. Sprinkle with powdered sugar when they are still warm.

Great pastry recipe! Simple to make, doesn’t require a lot of ingredients, and they taste fantastic. I have done these about 5 or 6 times now. I have used plum jelly, strawberry jelly, orange/mandarin jelly, and grape jelly. They always seem to turn out great. Just the right amount of sweet and nutty. They are melt in your mouth good. I just can't get enough of them.
