Ingredients

  • 1 tablespoon dijon mustard
  • 4 chicken thighs (each pounded to 1/3 inch thick)
  • 12 pitted prunes
  • 8 sage leaves (fresh)
  • 4 slices prosciutto
  • 1 tablespoon olive oil
  • green beans (steamed, to serve)

Directions

  1. Preheat oven to 400°F.
  2. Spread mustard over chicken thighs. Season to taste. Arrange 3 prunes and 2 sage leaves in the center of each thigh then roll up tightly. Wrap a slice of prosciutto around each roll and tie with butcher's twine to secure.
  3. Heat oil in an ovenproof frying pan over high heat. Cook chicken, turning, for 4-5 mins, until golden brown. Transfer pan to oven and bake for 12-15 mins, until cooked through. Serve sliced with green beans.
