Description

Healthy and wholesome, this Prune and Hazelnut Whole Wheat Cake is made with whole wheat flour and raw sugar for a cake that is not full of processed ingredients. Using marsala wine as the liquid element, this cake batter has a rich flavor that pairs perfectly with the flavors brought to the cake through the addition of hazelnut flour and dried prunes. Bake time is 50 to 60 minutes. Once cooled, sprinkle the cake with powdered sugar for an elegant finish.

Ingredients

  • 60 grams hazelnut flour
  • 2 eggs
  • 80 grams butter (softened and at room temperature)
  • 160 grams raw sugar
  • 160 grams whole wheat flour
  • 20 pitted prunes (dried)
  • 1 teaspoon baking powder
  • soy milk (as need)
  • 2 tablespoons marsala wine

Directions

  1. Beat the butter with the raw sugar until light and foamy.
  2. Add the eggs, one at a time.
  3. Add the Marsala wine, the whole wheat flour, and the hazelnut flour.
  4. Add the milk, if necessary and last, the sifted baking powder and mix well.
  5. Line a 22 centimeter cake pan with wax paper and add the batter.
  6. Add the prunes, pressing them into the batter.
  7. Bake at 175C for approximately 50 to 60 minutes.
  8. Remove the cake from the oven, let it cool completely and sprinkle it with powdered sugar.
