Prosciutto and Zucchini Tart

Ingredients

  • 1 sheet pie dough (frozen, thawed)
  • 3 eggs
  • 1/2 cup light sour cream
  • 1 zucchini (coarsely grated)
  • 1 spring onion (trimmed, finely chopped)
  • 1 clove garlic (minced)
  • 2 ounces prosciutto (finely chopped)
  • 1 ounce gruyère cheese (grated)

Directions

  1. Preheat oven to 400°F. Line an 8 inch square cake pan with parchment paper. Cut an 8 inch square from pie dough and use to line pan. Prick lightly with a fork then bake for 10-15 mins, until lightly golden.
  2. Reduce oven to 350°F. Whisk eggs, sour cream, zucchini, onion and garlic together. Season to taste then transfer to pie shell. Sprinkle with prosciutto and cheese. Bake for 25-30 mins, until just set. Let cool in pan for 10 mins then remove and cut into small squares.
