Ingredients

  • 8 slices prosciutto
  • 2 ounces spinach leaves (washed, dried)
  • 1 ounce parmesan cheese (grated)
  • 1 ounce cheddar cheese (grated)
  • 8 eggs
  • 1/4 cup heavy cream

Directions

  1. Preheat oven to 350°F. Lightly grease an 8 inch square cake pan.
  2. Sauté prosciutto in a frying pan over medium heat for 2-3 mins, until crisp. Layer prosciutto and spinach leaves in cake pan with Parmesan and Cheddar. Whisk eggs and cream together. Season. Pour into cake pan and bake for 20-25 mins, or until set.
  3. Serve hot or cold, cut into squares.
