Ingredients

  • 8 scallops (small)
  • 4 slices prosciutto (halved and folded like concertinas)
  • 2 tablespoons olive oil
  • 1/2 lemon (juiced)
  • lemon wedges (to serve)

Directions

  1. Thread 2 scallops and 2 - 1/2 slices prosciutto alternately onto 4 wooden skewers. Heat oil in a frying pan until smoking hot and cook skewers for 2 mins on each side. Drizzle with lemon juice and season. Serve with lemon wedges.
