Prosciutto-Wrapped Asparagus With Melon Balls

Ingredients

  • 12 asparagus spears
  • 1 cantaloupe
  • 1/2 cup grated parmesan cheese
  • 6 prosciutto (long thin slices of)
  • 1/2 cup olive oil

Directions

  1. Cip asparagus in olive oil
  2. Cut prosciutto in half length wise
  3. Wrap prosciutto around asparagus in a spiral from top to bottom
  4. Bake on baking sheet in oven on 400° for 5 minutes
  5. Sprinkle parmesan and bake for another 2 minutes
  6. Using a melon baller carve out balls of cantaloupe to serve with asparagus
  7. Garnish with rosemary or lightly drizzle with rosemary balsamic.
