Ingredients

  • 1 pound beef chuck roast (stew, cut into 1-inch cubes)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper (fresh)
  • 1/4 teaspoon cayenne pepper (to taste, use less if you don't like a lot of heat)
  • 1 onion (small, diced)
  • 1 clove garlic (minced)
  • 16 ounces green salsa (storebought, I like Herdez brand or homemade, mild to hot: your choice)
  • 15 ounces yellow hominy (or can white, also called pozole, drained and rinsed)
  • 2 teaspoons cornstarch (mixed with 4 tsp water)
  • 1 lime
  • fresh cilantro (for garnish)

This was an instant hit. I have a picky eater that does not like spicy food and they loved it. This is not spicy but the flavor is there. A 300 gram portion is 18 carbs, 7.2 fat, 32.5 protein at 290 calories. I have included the ingredients and measurements I used to cook this. Thanks for sharing an amazing dish.
