Ingredients

  • 2 cups black beans (your choice of rinsed and sorted, navy beans, pinto beans or adzuki beans, I like to use 1/2 Cup of each to add color, flavor and variety)
  • 7 cups water (divided)
  • 3 tablespoons olive oil
  • 1 onion (large, chopped)
  • 2 cloves garlic (minced)
  • 2 chicken breasts (frozen, I usually buy fresh chicken breasts when they are on sale and freeze them in individual bags to use in recipes like this)
  • 3 tablespoons taco seasoning (I use this homemade seasoning mix)
  • 4 ounces green chilies
  • 1 quart crushed tomatoes (home canned or 2 16-oz. cans crushed tomatoes)
  • 15 ounces corn (drained, or 2 cups frozen corn, cooked and drained)
  • salt

  • grated cheese
  • avocado
  • sour cream
  • tortilla chips
