Description

Praline paste adds a ton of flavor to these delicate cupcakes. The praline and hazelnut flour are the perfect combination. The sweet cakes are topped with a frosting that is a mixture of tart mascarpone and additional praline paste. If you don't have hazelnuts on hand when you want to make these cakes, you can easily substitute ground almonds or walnuts. You could even do a combination of different nuts for an extra complex flavor.

Ingredients

150 grams butter
150 grams brown sugar
150 grams flour
40 grams ground hazelnuts
3 eggs
120 grams praline paste
150 grams mascarpone

Directions

1Preheat oven to 425 degrees Fahrenheit.
2Whip the sugar and eggs until the mixture whitens.
3Add the melted butter and hazelnut powder.
4Finally, add the flour little by little.
5Pour batter into paper liners, half filling them.
6Add a small teaspoon of praline paste and cover (the molds should be 3/4 full).
7Bake for 20 to 25 minutes.
8When done, cool the cupcakes completely.
9Mix well with the remaining praline paste and mascarpone.
10Fill a pastry bag with this mixture and decorate the cupcakes as you wish.
