It can be prepared and saved in the fridge for the family to enjoy at any time. The great thing about doing this is it can be eaten when you are in a rush or not in the mood to cook. Ingredients

  • 2 cups elbow pasta (or similar shape)
  • 1 can tuna (in water, drained)
  • 1 carrot (grated)
  • 1/2 green bell pepper (diced)
  • 2 tablespoons mayonnaise
  • 2 tablespoons ranch dressing (prepared)
  • 1 lemon
  • salt and ground black pepper

Directions

  1. Cook the pasta, following the directions on the package, until slightly more firm than al dente. Drain and rinse with cold water. Set aside.
  2. Mix the tuna, carrot, pepper, mayonnaise, ranch dressing, lemon juice and rind together with the pasta. Salt and pepper to taste.

I like this tuna salad. I used ranch dressing for it instead of mayonnaise. You could probably just stir in ranch seasoning to the mayonnaise to. I have done it that way before, and it was good. Keep it cold in the refrigerator until it is time to serve it.
