Description

Here's another way to prepare potatoes as a side dish: Cut them into slices and coat them in a mix of ground cumin, paprika, fines herbes (a classic French blend), salt, and pepper, drizzle with oil, and toss to coat, then let stand to soak up the flavors. Here, the potatoes are fried in hot oil, but you could also bake them in a single layer, turning as needed, until crisped and golden brown.

Ingredients

  • 4 potatoes
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 4 tablespoons herbes de provence
  • salt
  • ground black pepper
  • olive oil

Directions

  1. 1Wash and peel the potatoes. Cut into slices or wedges.
  2. 2Place in a bowl and add the cumin, paprika, herbs, a pinch of salt and black pepper and a drizzle of oil. Mix well, cover with plastic wrap, and refrigerate for 30 minutes.
  3. 3Fry the potatoes in hot and drain on paper towel. Sprinkle with additional salt and serve warm.
