Potatoes with Bacon, Garlic, and Herbs

Description

These potatoes can be enjoyed for breakfast or dinner, depending on what you serve with them. In you want them fore breakfast, try with some over-easy eggs or an omelet. If you want to try them for dinner, a nice piece of chicken or steak is the perfect accompaniment. Boiling the potatoes before sauteeing them with bacon ensures they are soft and pillowy on the inside and perfectly crisp on the outside. Garlic and rosemary add are a great finishing accent.

Ingredients

  • 200 grams potatoes (small)
  • 4 strips bacon (diced)
  • 1 garlic cloves (minced)
  • 1 teaspoon dried rosemary
  • salt
  • ground black pepper

Directions

  1. Put the potatoes in a large pot of cold salted water. Place the pot on the stove and bring to a boil. Cook for about 10 to 15 minutes until the potatoes to soften. Drain the potatoes and set aside.
  2. Heat a skillet on medium heat and add the bacon. Cook for a few minutes, then add the potatoes and saute for about 5 minutes.
  3. Add the garlic, rosemary and a pinch of salt and black pepper. Mix everything together and cook for another 2 minutes. Serve warm.
