Potatoes with Bacon and Chanterelle Mushrooms

Ingredients

  • 2 tablespoons oil
  • 2 ounces bacon (diced)
  • 1/4 pound mushrooms (fresh chanterelles, halved if large)
  • 1 bunch spring onions (cut into rings)
  • 1 1/2 pounds potatoes (peeled and cut into cubes)
  • 1/2 cup dry white wine
  • 1 1/2 cups vegetable stock
  • 2 ounces parmesan cheese (grated)
  • 1/2 bunch arugula (chopped)

Directions

  1. Heat the oil in a frying pan and fry the bacon. Add the mushrooms and cook for 1-2 mins. Stir in the spring onions and potatoes and season with pepper. Pour in the white wine and stock, bring to a boil, cover and simmer for 8-10 mins. Stir in 2/3 of the Parmesan until it melts. Season to taste, fold in the arugula and sprinkle with the remaining Parmesan. Serve immediately in deep dishes.
