Description

The title of this dish says it all: Sliced potatoes are first coated in flour and fried in hot oil, then layered in a casserole dish and topped with a flavorful onion-leek-garlic saute and the broth it was cooked in, and then baked until all the flavors meld together in perfect harmony. The crowning glory? Parmesan cheese is sprinkled over the dish and browned in the oven, for a luscious topping.

Ingredients

1 potatoes
salt
ground black pepper
flour
vegetable oil
1 onions (peeled and chopped)
1 leeks (chopped)
2 garlic cloves (peeled and minced)
1 cup chicken (beef, or vegetable broth)
parsley
parmesan cheese (grated)

Directions

1Preheat the oven to 180 degrees Celsius.
2Cut the potatoes into 1- to 2-centimeter slices. Season with salt and pepper and coat with flour.
3Fry in plenty of hot oil in a skillet on medium-high heat. Drain the excess oil on paper towel. Set aside.
4Add a tablespoon of oil to another skillet on low heat. Add the onion, leek, and garlic. Saute over low heat.
5Add the broth and some of the parsley. Cook for 10 minutes.
6Put the potatoes in a baking dish, add the vegetables and cover with the broth. Bake for 15 to 20 minutes until the potatoes are tender.
7Add Parmesan cheese on top and bake until the cheese melts.
