Ingredients

2 potatoes (peeled, quartered, and cut into 2 mm slices)
8 tablespoons duck fat
1 clove garlic (minced)
3 sprigs parsley (minced)
salt and ground black pepper

Directions

1Heat the fat in a skillet and add the potatoes. Cook on high heat until slightly golden and then lower the heat. Cook until tender, stirring ocassioaly. Set aside.
2Combine the garlic and parsley. Salt and pepper the potatoes and spoon the parsley mixture over them.
3Cover and set aside for 15 minutes before serving.
