Potatoes Sarladaises is a traditional French recipe that is typically made with just three ingredients, potatoes, duck fat, and garlic. This recipe for Potatoes Sarladaises or Sarlat-Style Potatoes follows the traditional French preparation and adds a bit of minced parsley for a fresh flavor. Sliced into small cubes, the potatoes are cooked in hot duck fat until golden and tender and then covered with a mixture of minced garlic and parsley. These savory potatoes can be served with breakfast or as a lunch or dinner side.

Ingredients

  • 2 potatoes (peeled, quartered, and cut into 2 mm slices)
  • 8 tablespoons duck fat
  • 1 clove garlic (minced)
  • 3 sprigs parsley (minced)
  • salt and ground black pepper

Directions

  1. Heat the fat in a skillet and add the potatoes. Cook on high heat until slightly golden and then lower the heat. Cook until tender, stirring ocassioaly. Set aside.
  2. Combine the garlic and parsley. Salt and pepper the potatoes and spoon the parsley mixture over them.
  3. Cover and set aside for 15 minutes before serving.
