Ingredients

  • 2 pounds potatoes
  • 1/4 cup onion
  • 1/2 cup chopped celery (finely)
  • 3/4 cup Hellmann's Sandwich Spread
  • 4 slices bacon, crisp-cooked and crumbled

Directions

  1. Cover potatoes with cold water in 4-quart saucepot. Bring to a boil over high heat. Reduce heat to low and simmer 10 minutes or until potatoes are tender. Drain and rinse with cold water until cool.
  2. Meanwhile, combine remaining ingredients in large bowl. Add potatoes and toss to coat. Season, if desired, with salt and ground black pepper. Chill or serve at room temperature.

I liked the idea of the bacon, and maybe it's just me, but I used some Dijon mustard to spice it up with some smoky dried peppers my girlfriend makes. Better.
