Description

Potato and zucchini are the perfect pair in these tasty little cakes. You can enjoy them for any meal of the day, they are especially delicious in the summer when zucchini is fresh from the garden. Try them topped with a sunny-side up egg for breakfast, add them to a lightly dressed salad for a healthy lunch, or use them as the filling for a sandwich for a tasty and satisfying dinner.

Ingredients

  • 2 potatoes
  • 3 zucchini
  • 1 eggs (beaten)
  • 1 tablespoon greek yogurt
  • salt (to taste)
  • flour (as needed)
  • olive oil (as needed)

Directions

  1. 1Peel, wash and thoroughly dry the potatoes.
  2. 2Grate the potatoes using the thickest side of the grater.
  3. 3Wash and dry the zucchini, and grate them using the same side of the grater.
  4. 4Mix the ingredients with the eggs and yogurt and stir well.
  5. 5Dust the ingredients with flour and, using a fork, mix well.
  6. 6In a nonstick skillet, heat a splash of olive oil.
  7. 7Slowly add the mix and let it brown, flattening the surface with a spatula to make a patty.
  8. 8Brown the patty on both sides. Once browned, remove it from the skillet and place it on a paper towel to absorb any excess oil.
  9. 9Let the patty cool for a few minutes before serving.
