Potato and zucchini are the perfect pair in these tasty little cakes. You can enjoy them for any meal of the day, they are especially delicious in the summer when zucchini is fresh from the garden. Try them topped with a sunny-side up egg for breakfast, add them to a lightly dressed salad for a healthy lunch, or use them as the filling for a sandwich for a tasty and satisfying dinner.

Ingredients

  • 2 potatoes
  • 3 zucchini
  • 1 egg (beaten)
  • 1 tablespoon greek yogurt
  • salt (to taste)
  • flour (as needed)
  • olive oil (as needed)

Directions

  1. Peel, wash and thoroughly dry the potatoes.
  2. Grate the potatoes using the thickest side of the grater.
  3. Wash and dry the zucchini, and grate them using the same side of the grater.
  4. Mix the ingredients with the eggs and yogurt and stir well.
  5. Dust the ingredients with flour and, using a fork, mix well.
  6. In a nonstick skillet, heat a splash of olive oil.
  7. Slowly add the mix and let it brown, flattening the surface with a spatula to make a patty.
  8. Brown the patty on both sides. Once browned, remove it from the skillet and place it on a paper towel to absorb any excess oil.
  9. Let the patty cool for a few minutes before serving.

I was so happy to find a different style hash recipe; it definitely holds a 5 star rating. The potatoes are tender while the zucchini stays soft; all of which marinate in simmering spices.
