Ingredients

  • 300 grams leeks (trimmed and sliced)
  • 2 onions (diced)
  • 750 grams potatoes (peeled and diced)
  • 1 liter chicken stock
  • 20 grams butter
  • 3 tablespoons parsley
  • 150 grams crème fraîche
  • 75 grams tortilla chips (to serve)

Directions

  1. Bring leek, onions, potatoes and stock to a boil and simmer for 15-20 mins. Add butter and mash. Add meatballs and simmer for 8-10 mins, until cooked through. Season then divide between 4 bowls. Serve with parsley, crème fraîche (or sour cream, if using) and tortilla chips.
