Ingredients

  • 800 grams potatoes
  • 2 eggs
  • 80 grams parmesan cheese
  • nutmeg
  • garlic powder
  • onion powder
  • salt
  • ground black pepper
  • 2 eggs
  • 1 tablespoon milk
  • 100 grams bread crumbs
  • olive oil
  • 100 grams salami

Directions

  1. Peel the potatoes, boil them in salted water, and mash them with a potato masher.
  2. Place the mashed potatoes in a bowl and add the eggs, Parmesan cheese, nutmeg, garlic powder, onion powder, salt, and black pepper and combine well.
  3. In a bowl, beat the egg with the tablespoon of milk. Place the bread crumbs into another bowl.
  4. Shape the potato mixture into smooth cylindrical dumplings, coat them first with the beaten egg mixture, and then with the breadcrumbs.
  5. Fry the croquettes in a tall, narrow saucepan (or in a deep fryer) with a generous amount of hot oil.
  6. Drain the croquettes and place them on paper towels to absorb the excess oil.
  7. Wrap each croquette with a slice of salami and serve warm.

I made this dish for a family function we had last weekend and everyone seemed to want the recipe. The potatoes were nice and tender and the salami was salty. Every bite seemed to be filled with salami and potatoes making it that much more desirable to eat. I cannot wait to make this 4 star recipe again at our next family function.
