Potato and Mushroom Spanish Tortilla

Description

Serve this as your main dish, or even your only dish. Filled with potatoes and mushrooms, these tortillas are not made to wrap your taco. Instead, you’ll need a fork and knife to eat them. You can add ketchup or another condiment to create a variety of flavors and experiences.

Ingredients

  • 1 clove garlic (peeled and diced)
  • 200 grams milk
  • mushrooms
  • white wine
  • 2 potatoes (finely diced)
  • vegetable oil
  • 1 bunch fresh parsley (minced)
  • 2 eggs (beaten)

Directions

  1. 1Fry the diced garlic with a tablespoon of oil in a skillet, and then add the mushrooms.
  2. 2After 5 minutes, add a drizzle of white wine and let slowly reduce on low heat. Remove from heat and set aside.
  3. 3Fry the potatoes in hot oil.
  4. 4In a bowl, mix together the fried potatoes, sauteed mushrooms, parsley, and eggs.
  5. 5Pour this mixture out into a skillet to make the tortilla. Flip once to make sure both sides get evenly cooked.
