Description

Serve this as your main dish, or even your only dish. Filled with potatoes and mushrooms, these tortillas are not made to wrap your taco. Instead, you’ll need a fork and knife to eat them. You can add ketchup or another condiment to create a variety of flavors and experiences.

Ingredients

  • 1 clove garlic (peeled and diced)
  • 200 grams milk
  • mushrooms
  • white wine
  • 2 potatoes (finely diced)
  • vegetable oil
  • 1 bunch fresh parsley (minced)
  • 2 eggs (beaten)

    Directions

    1. Fry the diced garlic with a tablespoon of oil in a skillet, and then add the mushrooms.
    2. After 5 minutes, add a drizzle of white wine and let slowly reduce on low heat. Remove from heat and set aside.
    3. Fry the potatoes in hot oil.
    4. In a bowl, mix together the fried potatoes, sauteed mushrooms, parsley, and eggs.
    5. Pour this mixture out into a skillet to make the tortilla. Flip once to make sure both sides get evenly cooked.
