Experience duck liver like you’ve never had it before! Excellent for when those occasions when you want something just a bit out of the ordinary.

Ingredients

  • 5 potatoes (large)
  • 200 grams duck liver (mousse or pâté)
  • truffles
  • 1 egg yolks
  • 50 grams butter
  • ground white pepper

Directions

  1. Boil the potatoes until soft. Peel and mash, adding the yolk, butter, and white pepper.
  2. Grease a serving ring and fill with a layer each of mashed potatoes, duck liver mousse, and truffles. Repeat, finishing with a layer of mashed potatoes.
  3. Broil in the oven and decorate with Pedro Ximenez reduction.
