Potato and Duck Liver Truffle Mousse Parfaits

Description

Experience duck liver like you’ve never had it before! Excellent for when those occasions when you want something just a bit out of the ordinary.

Ingredients

5 potatoes (large)
200 grams duck liver (mousse or pâté)
truffles
1 egg yolks
50 grams butter
ground white pepper

Directions

1Boil the potatoes until soft. Peel and mash, adding the yolk, butter, and white pepper.
2Grease a serving ring and fill with a layer each of mashed potatoes, duck liver mousse, and truffles. Repeat, finishing with a layer of mashed potatoes.
3Broil in the oven and decorate with Pedro Ximenez reduction.
