Ingredients

  • 160 grams flour
  • 340 grams potatoes
  • 1 teaspoon baking powder
  • 10 grams salt
  • 30 grams sugar
  • 150 grams butter (melted)
  • 5 eggs
  • chives (Chopped)
  • 40 grams white cheddar (grated, or comté)
  • 8 deciliters milk
  • smoked salmon
  • cream
  • lemon

Directions

  1. Cook potatoes in boiling water and puree them without adding milk. Let cool.
  2. In a bowl, combine flour, baking powder, salt, sugar, eggs, potato puree, chives, grated cheese, and melted butter.
  3. Gradually add the milk, stirring constantly.
  4. Let the dough rest for 2 hours.
  5. Heat a waffle iron and cook waffles until well browned.
  6. To serve, place a small piece of smoked salmon on each waffle, garnish with cream, pepper and lemon zest.

I always have fun making the potato waffles in this recipe because they are so easy to do and look pretty neat. They are crunchy with soft insides and the smoked salmon has a light fish taste.
