Description

Proof that waffles don’t have to be boring. Slices of salmon adorn each waffle, adding bold flavor. Topped off with cream, you’ll love the richness of this breakfast.

Ingredients

  • 160 grams flour
  • 340 grams potatoes
  • 1 teaspoon baking powder
  • 10 grams salt
  • 30 grams sugar
  • 150 grams butter (melted)
  • 5 eggs
  • chives (Chopped)
  • 40 grams white cheddar cheese (grated, or comté)
  • 8 deciliters milk
  • smoked salmon
  • cream
  • lemon

Directions

  1. Cook potatoes in boiling water and puree them without adding milk. Let cool.
  2. In a bowl, combine flour, baking powder, salt, sugar, eggs, potato puree, chives, grated cheese, and melted butter.
  3. Gradually add the milk, stirring constantly.
  4. Let the dough rest for 2 hours.
  5. Heat a waffle iron and cook waffles until well browned.
  6. To serve, place a small piece of smoked salmon on each waffle, garnish with cream, pepper and lemon zest.
