Cold weather means it is time to make a warm soup for dinner. This recipe for Potato Soup is guaranteed to warm you up and make you feel cozy inside and out. Creamy and buttery, this potato soup incorporates diced mushrooms and mushrooms into the soup. Flavored with nutmeg and fresh thyme, the savory flavors of this potato soup will warm you from the inside out. Serve with your favorite variety of bread for dipping.
Ingredients
- 150 grams potatoes (peeled and ct)
- salt and ground black pepper
- 25 grams butter
- 200 milliliters vegetable broth
- 100 milliliters cream
- 100 grams mushrooms (diced)
- 1 onions (minced)
- 1 olive oil (generous tbsp.)
- nutmeg
- 1 fresh thyme (generous tbsp. plus additional)
Directions
- 1Boil the potatoes in water with a pinch of salt for 15 minutes, until tender. Mash and add the butter.
- 2Heat the broth and add to the potatoes.
- 3Saute the mushrooms and onion in a little olive oil in a skillet. Add to the potato mixture, reserving a few of the mushrooms. Season with salt, pepper, nutmeg, and thyme.
- 4Ladle the soup into serving bowls and garnish with the reserved mushrooms and additional thyme.
