  • 5 slices bacon (diced)
  • 3 tablespoons bacon grease (reserved or butter)
  • 1 cup yellow onion (or diced white)
  • 1/4 cup all purpose flour
  • 2 cups chicken stock
  • 2 cups milk (warmed)
  • 1 1/2 pounds potatoes (peeled, if desired and diced, I recommend Yukon gold potatoes)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup plain greek yogurt (or sour cream)
  • 1 teaspoon kosher salt (or more to taste)
  • 1/2 teaspoon cracked black pepper (freshly-)

    I haven’t ate it yet, I cranked up the servings for 10 people but it looks and smells delicious though. Added some diced celery, rosemary, thyme, grated robusto cheese and a smidge of extra butter.

    The most delicious potato soup I’ve had in a long time! I doubled the recipe and it was the perfect amount for 3 kids as well as my husband and I. I typically shy away from recipes with bacon in them due to it overtaking the flavor, but with this recipe it did not. Will definitely make again and again. I sprinkled a little bit of creole seasoning in for some added flavor as she suggested

    Very tasty!! Would probably cut the potatoes a little smaller (ours were quarter inch cubes). We also added cauliflower during the sautée stage and it came out perfect!

    It turned out well, super creamy and smooth. I have been trying out different soups weekly and this one for me felt heavier. Definitely a filling soup for sure.
