Potato salad is a hearty side dish for any backyard barbecue, holiday potluck or celebration. This recipe that has two servings and takes 40 minutes to prepare, is for Potato Salad with Guacamole. It is a flavorful dish that will bring the crowds running. Ingredients include potatoes, salt, green bell pepper, tomatoes, avocado, chile or jalapeno pepper, garlic clove, lime, ground black pepper, and cilantro.

Ingredients

  • 2 potatoes (large)
  • salt
  • 1/2 green bell pepper (julienned)
  • 1 tomato (large, sliced)
  • 1 avocado (ripe)
  • 1 chile pepper (jalapeno, minced)
  • 1 clove garlic (minced)
  • 1 lime
  • ground black pepper
  • cilantro (minced)

Directions

  1. Wash the potatoes and cut into slices 1/2 centimeters in width. Boil in cold water with salt until softened. Drain well and rinse with cold water. Let cool completely.
  2. Mash the avocado with the onion, jalapeno, garlic, lime rind and juice. Salt and pepper and set aside.
  3. Place the potatoes on a plate and layer tomato and green pepper. Season with salt and pepper. Serve with a generous scoop of guacamole and sprinkled with cilantro.

This salad is versatile enough to serve as a side dish at your next picnic or barbecue or to stand alone as a low calorie, but highly fulfilling lunch. I will absolutely make this salad again.
