  • 2 potatoes (large)
  • salt
  • 1/2 green bell pepper (julienned)
  • 1 tomato (large, sliced)
  • 1 avocado (ripe)
  • 1 chile pepper (jalapeno, minced)
  • 1 clove garlic (minced)
  • 1 lime
  • ground black pepper
  • cilantro (minced)

    Directions

    1. Wash the potatoes and cut into slices 1/2 centimeters in width. Boil in cold water with salt until softened. Drain well and rinse with cold water. Let cool completely.
    2. Mash the avocado with the onion, jalapeno, garlic, lime rind and juice. Salt and pepper and set aside.
    3. Place the potatoes on a plate and layer tomato and green pepper. Season with salt and pepper. Serve with a generous scoop of guacamole and sprinkled with cilantro.
