Description

The crust for this pizza is made from a combination of potatoes, flour, and salt for a rich dense crust. Top the crust with pesto and your favorite pizza toppings such as grated parmesan, tomatoes, capers, or anchovies. Bake for 15 to 20 minutes or until the edges are crispy and golden. This homemade pizza is quick and easy to make and is ready to serve in less than an hour.

Ingredients

  • 200 grams potatoes (cooked weight)
  • 100 grams flour
  • 2 tablespoons pesto (dried tomato)
  • 1 inch olive oil
  • 1 can anchovies
  • 2 tomatoes (large, ripe, thinly sliced)
  • capers
  • fresh oregano
  • pepper
  • salt

Directions

  1. Peel and dice the potatoes, and boil until soft and tender.
  2. Drain and mash the potatoes.
  3. Place the mashed potatoes on a floured work surface.
  4. Add a little flour and a pinch of salt.
  5. Work in the flour, adding a little at a time, until it forms a smooth, elastic dough that does not stick to the hands.
  6. Line a pizza pan with baking paper.
  7. Roll out the dough until very thin.
  8. Pre-heat the oven to 180C.
  9. Spread the pesto over the base. Cover with tomatoes, anchovy, capers, black pepper, and a little oil from the anchovy (optional).
  10. Cook for 15–20 minutes or until the edges appear crispy and golden.
  11. Sprinkle with fresh oregano and serve.
