Braccini, or broccoli raab is a pungent vegetable whose flavor is reminiscent to mustard greens. It is a great source of vitamin A and C, as well as potassium, calcium, and iron, which makes it a great addition to your morning meal. This recipe offers a starchy puree base with fluffy eggs and crispy bacon. Don’t be afraid to have a second serving! It only takes 5 ingredients to make and is a mere 80 calories per serving.

Ingredients

  • mashed potatoes (to taste, It will depend on how many people will be served)
  • 1 bunch rapini
  • 2 garlic cloves
  • eggs (to taste)
  • bacon (in bits)

Directions

  1. Make the puree and reserve.
  2. Bring a skillet to medium heat with a little bit of olive oil and the crushed garlic, add the greens, well washed, drained and chopped. Let them soften for a few minutes.
  3. In small ovenproof platters, build small nests with the puree covering the bottom and the sides.
  4. Within each nest, pour the sauteed greens with an egg on top.
  5. Meanwhile, sauté some pieces of bacon in a skillet.
  6. Cover the puree with the pieces of bacon and bake until the eggs cook. (I was on the phone and lost track of the time, so they stayed for a bit longer hehehe).
  7. A recipe that, although simple, I fully enjoyed.

I wanted to keep this vegetarian so I omitted the bacon and it was still so delicious. I added a big pinch of red pepper with the rapini. And be sure to watch the eggs while in the oven. I wanted them to be a little runny and not hard cooked; it took about 12 minutes.
