  • 4 baking potatoes (medium, scrubbed, leave skins on)
  • 1 cup raw cashews (soaked in room temperature water for 6-8 hours and drained)
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon sesame tahini
  • 1/2 teaspoon mustard powder
  • 3/4 cup soy milk (unsweetened plain, is too sweet for this recipe)
  • 3 tablespoons chopped fresh herbs (choice, I used dill and cilantro; chives would be fabulous in these, of course, but I didn’t have any)
  • fine sea salt (to taste)
