Description

These simple little potato dumplings make for a delicious appetizer when entertaining. Mashed potatoes are seasoned with garlic, basil, salt and pepper for a simple but flavorful base. The mashed potatoes are formed into bite-sized balls and then topped with an anchovy, creating a well-balanced and hearty bite. Ingredients

boiling potatoes
basil
garlic
salt
pepper
extra-virgin olive oil
anchovies
olives

Directions

1In the bowl of the mixer (or food processor) grind a clove of garlic, basil leaves, salt, and extra virgin olive oil until well combined.
2Mash the potatoes with a fork and season them with garlic and basil mixture and a pinch of pepper. Mix well until they are a little softer, like a very thick puree.
3Form small balls with the mixture of the puree. Place anchovies on top and drizzle with a little olive oil.
