Portuguese Sweet Potato Soup with Sausage

Ingredients

  • 250 grams chorizo (or cabanossi, peeled and sliced)
  • 1 onion (peeled and finely diced)
  • 1 clove garlic (peeled and finely diced)
  • 650 grams sweet potatoes (peeled and chopped)
  • 400 grams potatoes (peeled and chopped)
  • 1 tablespoon olive oil
  • 1 liter chicken stock
  • 350 grams spinach leaves (coarsely chopped)

Directions

  1. Heat oil in a large pot and sauté chorizo. Set aside. Sweat onion and garlic until translucent. Add potatoes and stock. Cover and cook for 15 mins. Return chorizo to pot and add spinach. Cook for 5 mins. Season to taste and serve.
