I have eaten a lot of chourico usually as a sandwich.... I like food that is not too spicy, so I would be concerned about the temperature of the peppers. I know the tomatoe paste will hold the recipe together. I would add some kale to the recipe for color and also add the needed garlic. Bon Appetit !

I went to the meat department and requested chourico and was actually referred to a sausage shop, which I didn't know existed. I wanted this to be as authentic as possible. I added red, yellow and orange bell peppers to the recipe. I thought this was filling and flavorful served over rice. I will definitely try this recipe again.
