This traditional portuguese sweet bread is made without yeast or butter. Sprinkled with cinnamon sugar on top and baked with brown sugar, this bread has a warm rich flavor. Ideal for the cold winter months.

Ingredients

  • 500 grams plain flour
  • 200 grams brown sugar
  • 3 eggs
  • 1.5 deciliters olive oil
  • 2 deciliters instant coffee
  • 1 lemon zest
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • sugar (for garnish)
  • cinnamon (for garnish)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a baking tray with olive oil, and dust with flour.
  3. Place all the ingredients in a large bowl, and beat with a mixer until the dough is smooth, with no lumps.
  4. Place the dough in the tray, and sprinkle with sugar and cinnamon.
  5. Bake for 30 minutes.
  6. Remove from oven, let cool, cut into squares, and serve.

The subtle essence of orange in these cookies was what carried the flavor for me. I decided to frost them with an orange icing made from powdered sugar, orange juice and milk. Lastly, I added a drop of orange food coloring. The icing complimented the orange juice in the cookie and added some sweetness and color. However, powdered sugar alone perks them up as well.
