- 2 Tbsp. oil (divided)
- 12 oz. portobello mushrooms (cut into 1/2-inch strips)
- 1 onion (medium, cut into thin strips)
- 1 bell pepper (medium, cut into thin strips)
- 1/4 cup water
- 1 pkg. fajita seasoning mix (McCormick® Organics)
- 8 tortillas (6-inch, warmed)

Directions
- Heat 1 tablespoon of oil in large skillet on medium-high heat. Add mushrooms; cook and stir 3 minutes. Remove from skillet. In same skillet, heat remaining 1 tablespoon oil. Add onion and bell pepper; cook and stir 3 to 5 minutes. Return mushrooms to skillet.
- Stir in water and Seasoning Mix. Cook and stir 3 minutes or until slightly thickened.
- Spoon into tortillas. Serve with desired toppings.

Turned out fantastic! Used taco seasoning because the store didn’t have fajita seasoning.

It was yummy. I added my own spices to my taste. It was a hearty meal eaten with the cilantro lime cauliflower.
