Pork Tenderloin With Port & Fig Sauce

Ingredients

  • 2 tablespoons promise buttery spread
  • 1/2 pound pork tenderloin (cut into 6 slices)
  • 2 granny smith apple
  • 1 red onion (small, thinly sliced)
  • 1/4 teaspoon dried thyme leaves, crushed
  • 1/8 teaspoon ground black pepper
  • 1/2 cup apple juice
  • 1/4 cup fig
  • 2 tablespoons port wine (or apple juice)

Directions

  1. Season pork with thyme and black pepper. Melt Promise® Buttery Spread in 12-inch nonstick skillet over medium-high heat and cook pork, turning once, 6 minutes or until done. Remove pork to serving platter and keep warm.
  2. Add apples and onion to same skillet and cook, stirring occasionally, 4 minutes or just until tender. Stir in port and bring to a boil over high heat. Add apple juice and figlets. Return to a boil. Reduce heat to low and simmer covered 5 minutes or until apples and onion are tender. Serve apple mixture over pork.
