  • 12 slices bacon
  • 1 pound pork tenderloin (sliced into 6 medallions)
  • 1 pound turkey breast (sliced into 6 medallions)
  • 2 tablespoons olive oil
  • 1/2 pound mushrooms (trimmed and thickly sliced)
  • 4 spring onions (trimmed and sliced)
  • 1 cup garlic sauce
  • 3/4 cup heavy cream
  • 1/4 pound gouda cheese (grated)
  • 1 1/2 pounds small potatoes (peeled)
  • 1 1/2 tablespoons butter
  • 1 bunch fresh parsley (finely chopped)

Directions

  1. Preheat oven to 350°F. Wrap bacon slices around medallions. Heat oil in a large frying pan and sauté medallions over high heat for 2-3 mins. Remove from heat and season. Add mushrooms and sauté for 2-3 mins. Add spring onions and cook for 2 mins. Add garlic sauce and cream and season. Transfer medallions and mushroom sauce to a large baking dish. Sprinkle with grated cheese and bake for 30 mins.
  2. Meanwhile, cook potatoes in boiling salted water for 20 mins. Drain. Heat butter and sauté 2/3 of chopped parsley. Toss with potatoes. Garnish casserole with remaining parsley and serve with potatoes.
