This simple, spicy stir-fry is also good served over hot rice or rolled up in a flour tortilla. Serve with fresh fruit.

- 1 lb. ground pork
- 1/2 tsp. chili powder
- 1/4 tsp. ground cumin
- 2 Tbsp. olive oil
- 1/2 medium onion (thinly sliced)
- 1/2 red bell pepper (thinly sliced)
- 1/2 green bell pepper (thinly sliced)
- sesame seeds
- jasmine rice
- cilantro (chopped)

Directions
- Add olive oil to a skillet and cook ground pork over medium-high heat about 3 minutes or until pork reaches an internal temperature of 160 degrees F, breaking pork in to 3/4-inch crumbles. Season with chili powder and cumin.
- Add onion and peppers to pan, cook and stir until onion is tender, about 3-4 minutes.
- Serve over jasmine rice and top with cilantro.

Great! I used Chipotle Chili powder instead of regular to kick it up a notch.
