Ingredients

  • 2 teaspoons canola oil
  • 1 pound pork tenderloin (sliced)
  • 1 red pepper (seeded, sliced)
  • 1 teaspoon cumin seeds (roughly crushed)
  • 2 cloves garlic (minced)
  • 1 bunch green onions (sliced into 1 inch pieces)
  • 1 teaspoon sesame oil
  • 8 ounces broccoli florets (blanched in boiling water for 1-2 mins, drained)
  • 1 tablespoon sweet chili sauce
  • 4 tablespoons light soy sauce
  • 10 cilantro leaves (fresh)
  • 10 fresh basil leaves
  • 8 ounces rice noodles (softened in boiling water for 2-3 mins, drained)

Directions

  1. Heat oil in a wok or frying pan. Add pork and stir-fry for 8 mins. Add pepper, cumin, garlic, green onions and sesame oil. Stir-fry for 2-3 mins. Add broccoli, chili sauce, soy sauce and 4 tbsp water. Stir-fry for 2 mins. Add herbs and noodles and toss to combine. Serve.
