Ingredients

  • 3 1/2 ounces couscous
  • 8 3/4 ounces ground pork
  • 1 medium carrot (coarsely grated)
  • 1/2 cup cilantro leaves (fresh, chopped)
  • 1 clove garlic (minced)
  • 1/3 cup olive oil
  • 10 1/2 ounces sweet potatoes (peeled, cut into 3/4 inch cubes)
  • 2 ounces baby spinach
  • 1/4 cup pinenuts (toasted)
  • 2 1/2 ounces ricotta cheese (crumbled)
  • 1 tablespoon lemon juice

Directions

  1. Combine couscous with 1/2 cup boiling water. Cover with plastic wrap and set aside for 5 mins, or until liquid is absorbed. Using a fork, fluff and separate grains. Let cool then mix with ground pork, carrot, cilantro and garlic. Shape into 4 patties.
  2. Heat 1/2 the oil in a frying pan over medium heat. Cook patties for 3 mins per side, or until browned and cooked through. Drain on paper towels.
  3. Meanwhile, steam sweet potatoes for 5-6 mins, or until tender. Let cool slightly then mix with spinach, pine nuts, ricotta, lemon juice and remaining oil. Season.
  4. Serve patties with salad.
