Description

It takes 30 minutes to prepare and has 170 calories. This decadent recipe combines sliced chorizo sausage with hearty spices and adds pinto beans, and shredded Monterey jack cheese for a flavorful explosion. Ingredients

1 tablespoon olive oil
1/2 onions (minced)
2 garlic cloves (minced)
1 piece chorizo (. sliced)
2 tomatoes (medium, chopped)
2 cups pinto beans (boiled and drained)
100 grams monterey jack (shredded)

Directions

1Heat olive oil in a large skillet on medium heat.
2Saute the chopped onion and garlic for two minutes.
3Add the chorizo and cook it until it becomes slightly brown.
4Remove the contents onto a plate lined with paper towel. Drain excess grease.
5Add ingredients back to skillet and cook for another 5 minutes.
6Add the beans and mash everything together.
7Add a small amount of bean water, along with the cheese. Serve warm.
