It takes 30 minutes to prepare and has 170 calories. This decadent recipe combines sliced chorizo sausage with hearty spices and adds pinto beans, and shredded Monterey jack cheese for a flavorful explosion. Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion (minced)
  • 2 garlic cloves (minced)
  • 1 piece chorizo (. sliced)
  • 2 tomatoes (medium, chopped)
  • 2 cups pinto beans (boiled and drained)
  • 100 grams monterey jack cheese (shredded)

Directions

  1. Heat olive oil in a large skillet on medium heat.
  2. Saute the chopped onion and garlic for two minutes.
  3. Add the chorizo and cook it until it becomes slightly brown.
  4. Remove the contents onto a plate lined with paper towel. Drain excess grease.
  5. Add ingredients back to skillet and cook for another 5 minutes.
  6. Add the beans and mash everything together.
  7. Add a small amount of bean water, along with the cheese. Serve warm.

I love the smoky taste of chorizo with these beans. We ate this by the bowl full topped with plenty of the shredded Jack cheese. My husband wants me to dice up some jalapeno with it next time. I think that would be fantastic!
