Ingredients

  • 3 pounds pork tenderloin
  • 4 tablespoons honey
  • 2 tablespoons cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon dijon mustard
  • salt
  • pepper

Directions

  1. Preheat oven to 400 degrees.
  2. In a small bowl, combine honey, vinegar, sugar and mustard.
  3. Sprinkle tenderloin liberally with salt and pepper.
  4. Coat tenderloin well with the sauce.
  5. Place tenderloin in a shallow pan and roast for 20 - 25 minutes or until meat thermometer inserted registers 155 - 160 degrees.
  6. If you want the tenderloin to keep its shape, you will need to truss it with kitchen string.
  7. Slice to serve.
